Most people don’t think of combining grains with ice creams but not all people are Edward Lee.
Working for the wonderful Mind of a Chef series, Lee has produced a great video recipe using sorghum to make ice cream.
The grain is aged in a bourbon barrel for one year before it’s cooked with grits and topped with a number of flavours, including coffee, raspberries and thyme.
