Flynn McGarry's Beet Wellington
Flynn McGarry is the chef-owner of Gem restaurant in Manhattan. He shot to fame when he started hosting pop-up dinners at the family home in California in his early teens, before stints at restaurants including Eleven Madison Park and Maaemo. A 2018 documentary, Chef Flynn, followed McGarry from child prodigy to the opening of his first restaurant.
McGarry recently appeared on Masterchef Italia, during which he shared this veggie twist on a classic beef wellington. “The dish was actually one part of a much longer project relating to beets. I was looking for a way to add fat and caramelisation to a beet, and puff pastry seemed like the easiest way. After that the association to beef wellington sort of did the rest,” he says.
