Originally born in Australia, Thompson has spent his career breathing life into forgotten recipes that even Thai born residents may have never seen or tasted. He really hit the world after opening the Nahm restaurant in London - the first ever Thai restaurant to receive a Michelin star.
The chef’s knowledge, dedication and passion for Thai cuisine sets him apart from other’s and saw him claim the top spot on Asia’s 50 Best Restaurants list in 2014.
Speaking about the award, he said: “ Usually I am rather embarrassed by awards but to receive something as significant as this, voted for by my peers in the industry, does indeed make me proud and grateful. I still have the same joy in cooking as I had when I first began. It is a timeless pleasure for me, so I feel very lucky.”
