Experiment with toppings by adding crunch with croutons made from stale bread, or fried veggie peels. Conversely, a dollop of full-fat yoghurt or soft cheese can up the creamy factor. Serve warm with some toasted sourdough and good quality butter.
Soups can easily be frozen, to be defrosted in the microwave or stovetop when you are in a hurry. So make an extra portion or two, divide into portions and freeze in freezeproof containers.
