How to make Hu Tieu recipe, a Vietnamese noodle soup usually prepared with meat or seafood: find out all the ingredients to prepare this warm and spicy soup.
- Sesame oil 1 tbsp
- Chilli 1 red, sliced in rings
- Ginger 2 - 3 cm, peeled, chopped
- Garlic 1 clove, peeled, chopped
- Dashi 1000 ml
- Chicken 2 breasts, approx. 140 g each
- Rice noodles 200 g
- Broccoli 300 g, cut into florets
- Thai basil 1 handful
- Coriander leaves
- Soy sauce 3 - 4 tbsp
- Brown sugar 1 pinch
- Lime juice 1 - 2 tbsp

Hu Thieu recipe, Vietnamese Noodle Soup
To prepare Hu Thieu recipe start heating the oil in a pan and briefly fry the chilli, ginger and garlic.
Pour in the dashi and bring to the boil.
Add the chicken and noodles and cook over a low heat for approx. 10 minutes, adding the broccoli after about 5 minutes.
Remove the chicken from the soup and slice or tear into pieces.
Return the pieces to the soup.
Mix in the herbs.
Season the soup with soy sauce, sugar and lime juice.
Garnish the Hu Thieu recipe with fried onion to serve.
