Chef Evan Hennessey is the chef and owner of Stages in Dover, New Hampshire, where he serves his signature Progressive New England cuisine through an intimate tasting menu built around locally farmed, foraged, and seasonal ingredients. In 2026, he won the James Beard Foundation Award for Best Chef: Northeast, one of the country's highest culinary honors.
A graduate of Le Cordon Bleu at the Atlantic Culinary Academy, Hennessey trained in some of the nation's most acclaimed kitchens, working alongside chefs including Charlie Palmer, Grant Achatz, Andrew Carmellini, Ken Oringer, and Thomas Keller. He is also a three-time champion on Food Network's Chopped and has been recognized by StarChefs and Plate Magazine.
Since opening Stages in 2012, Hennessey has earned national recognition for his inventive approach to regional cuisine. The restaurant has been named among North America's 100 Best Restaurants by Opinionated About Dining for multiple consecutive years and continues to celebrate New England's farms, fisheries, and producers through an ever-evolving tasting experience.
