FOR THE RIBS

Pork ribs: 2 racks

Brown sugar: 2 tbsp

Smoked paprika: 1 tbsp

Garlic powder: 1 tsp

Salt and pepper: to taste

FOR THE TAMARIND GLAZE

Tamarind paste: 3 tbsp

Kecap manis: 1/4 cup

Honey: 2 tbsp

Rice vinegar: 1 tbsp

Garlic clove: 1 (grated)

Small red chili: 1 (finely chopped)

How to make Pork Ribs with Tamarind Glaze

Season the Ribs
  • Season the ribs with the brown sugar, smoked paprika, garlic powder, salt, and pepper.

Cook Until Tender
  • Wrap the ribs tightly in foil and cook indirectly on a grill or in a 300°F oven for about 2½ hours, until tender.

Make the Tamarind Glaze
  • Meanwhile, combine all of the glaze ingredients in a saucepan and simmer for 5 to 7 minutes, until slightly thickened.

Grill and Glaze
  • Finish the ribs on a hot grill, brushing repeatedly with the tamarind glaze until sticky and caramelized.

Slice and Serve
  • Slice the ribs and serve warm.
