The Chef

Born in Bangkok, Thailand, Cédric Vongerichten is the chef and owner of New York City's French-Indonesian restaurant Wayan and its sister restaurant, Ma•dé, which specializes in Padang-style Indonesian cuisine. The son of acclaimed chef Jean-Georges Vongerichten, he grew up immersed in professional kitchens before graduating from the Culinary Institute of America and honing his craft at renowned restaurants including El Bulli in Barcelona and the Mandarin Oriental in Hong Kong.

In 2018, Vongerichten and his wife, Ochi, opened Vong Kitchen and Le Burger in Jakarta before returning to New York to launch Wayan in 2019 and Ma•dé in 2022. Wayan was named one of Esquire's Best New Restaurants in America in 2019 and is the only Indonesian restaurant in the United States recognized by the MICHELIN Guide. Vongerichten has also been recognized by Zagat as one of its "30 Under 30" chefs and was honored by The Best Chef Awards in 2024.

His cooking blends classical French technique with the strong flavors of Indonesia, drawing on both his family heritage and years spent living and cooking in Southeast Asia.
