Saturday, next door at Identità Golose: the first secret recipe was unveiled at the stand of Acqua Panna – San Pellegrino at Milan Food & Wine Festival. Chef Eugenio Boer of Enocratia, a new Milanese gourmet restaurant, presented a complex dish rich of ingredients: Consommé of Padovana Chicken.
The secret recipe is a cooking lesson in disguise. There are 30 different ingredients on the table: only some end up getting used by the Chef for the final dish. This case it was the Consommé of Padovana Chicken. The recipe includes four tortelli of different sizes and stuffings: breast, wings, thighs and interiors. Four different types of cooking, four seasoning and four different sensations. It gets served with a classic consommé made of the bones of the chicken and beef. Add to that few drops of olive oil, a characteristic effect of the original chicken broth. Those who participated to the event discovered tips and cooking tricks given by the Chef himself.
