Inside Chef Wei Chen’s Most Memorable Restaurant Experiences
About the list
The best meal I have ever had in my life. One of the most important things in cooking is knowing time, temperature, manipulation, and respecting ingredients, and these chefs have it down. That is fine dining, you walk in and you are transported to a spa-like oasis of a counter that is perfectly done and symmetrical, and everything is executed in an unbelievable way. Every dish was unreal and super clean. The storytelling aspect was incredible. There were cards with each dish that described where the ingredients were sourced. It was not over the top. It was all about the food and just amazing.
I had the most amazing 26-course meal with five of my chef friends. Corey Chow was the chef de cuisine there at the time. We sat at 6 p.m. and did not leave until after 1 a.m. It was such a memorable night. When we arrived we brought the staff about 100 falafels from Mamoun's Falafel and a bunch of Gatorade and Modelos as an industry thank you. I will never forget that during the dinner, maybe around course 11, they did an a la minute falafel course out of nowhere and it was incredible.
One of the best omakases in New York. Easily.
Impossible to get into, but the food is unbelievable. It is a 20-course kaiseki meal that is more than just a meal. It is an experience.
Unreal and the best Italian food I think I have ever had. I love Italian food and this is easily one of my favorite spots.
