1. Soften the dried fruit overnight in 750 ml cold water.
2. The next day place the fruit and the water in a pot. Add large pieces of the orange zest and the cinnamon stick.
3. Bring to a boil and simmer until the fruit is soft. This will take around 20 minutes depending on the type and quality of the fruit.
4. Once cooked add some sugar to taste while the compote is still warm. Let cool and remove the orange zest and the cinnamon stick before serving.
