Christmas shortbread cookies (gluten-free, dairy-free) recipe
If you want to feed a crowd this Christmas, try baking up a batch of this gluten and dairy-free star cookies that are so delicious, no one will notice the difference, dietary requirement or not!
Season & Occasion
Stir together the flour mix, cornflour, spices, xanthan gum, and salt in a large mixing bowl.
In another mixing bowl, cream together the margarine and sugar until pale and creamy, about 2 minutes.
Add the egg yolk and almond milk, beat well, and then fold in the flour mixture, orange juice and zest, and mix to a soft dough. Shape the dough into a round, wrap in clingfilm, and chill for 1 hour.
After chilling, preheat the oven to 170°C (150° fan) | 325F | gas 3. Grease and line two large baking trays with greaseproof paper.
Roll out the dough on a lightly floured surface to 0.75 cm | 0.333" thickness. Use a star-shaped 5 cm | 2" cookie cutter to cut out stars from the dough.
Arrange the stars on the trays, spaced apart. Bake for 20-25 minutes until dry to the touch and golden on top. Remove to wire racks to cool.
Tie stacks of shortbread with decorative red and white ribbon before serving or presenting as gifts.
