cherries
600 g, red, pitted
Orange juice
55 ml, freshly squeezed
Lemon juice
2 tbsp
Olive oil
2 tbsp
Garlic
2 cloves, crushed
Shallot
1 small, finely chopped
salt
Pepper
black, freshly ground
cucumber
1/2, peeled and diced
cherries
300 g, red, pitted and chopped
Coriander
2 tbsp, finely chopped
Lemon juice
1 tbsp
salt

Preparation

Step 01

For the soup

  • Combine the cherries, orange juice, lemon juice, olive oil, garlic, and shallot in a food processor.
  • Blend on high for 2 minutes until smooth.
  • Pass through a sieve into a jar and season to taste with salt and pepper.
  • Cover and chill for 2 hours.

Step 02

To serve

  • Toss together the diced cucumber, chopped cherries, and coriander with the lemon juice.
  • Season to taste with salt.
  • Ladle the chilled soup into bowls and top with the cucumber salad.
  • Serve immediately.
