
Cherry Gazpacho

ingredients
Cherries
600 g, red, pitted
Orange Juice
55 ml, freshly squeezed
Lemon juice
2 tbsp
Olive oil
2 tbsp
Garlic
2 cloves, crushed
Shallots
1 small, finely chopped
Salt
Pepper
black, freshly ground
Cucumber
1/2, peeled and diced
Cherries
300 g, red, pitted and chopped
Coriander
2 tbsp, finely chopped
Lemon juice
1 tbsp
Salt
Preparation
Step 01
For the soup
- Combine the cherries, orange juice, lemon juice, olive oil, garlic, and shallot in a food processor.
- Blend on high for 2 minutes until smooth.
- Pass through a sieve into a jar and season to taste with salt and pepper.
- Cover and chill for 2 hours.
Step 02
To serve
- Toss together the diced cucumber, chopped cherries, and coriander with the lemon juice.
- Season to taste with salt.
- Ladle the chilled soup into bowls and top with the cucumber salad.
- Serve immediately.
