Heritage is a MICHELIN-starred restaurant in Long Beach, California, offering a seasonal tasting menu shaped by local sourcing and a zero-waste approach to cooking.
Founded in 2020 by chef Philip Pretty and his sister, Lauren Pretty, the restaurant is set in a restored Craftsman home in the Rose Park neighborhood. The siblings built Heritage around a shared commitment to sustainability, with systems in place that influence everything from sourcing to service.
The nine-course tasting menu changes frequently, reflecting ingredients sourced from local farmers’ markets and regional producers. Seafood is line-caught, meats are pasture-raised, and produce is selected based on seasonality and proximity. In the kitchen, ingredients are used in full, with trims repurposed into additional dishes, staff meals, or compost.
Much of the restaurant’s produce comes from Heritage Farm, located nearby, which supplies ingredients year-round while also serving as an event and community space. This relationship allows the kitchen to operate with a closed-loop mindset, where sourcing and waste reduction are closely tied.
The beverage program focuses on California, with wine and beer sourced from local producers. The tasting menu is served as designed, though guests can communicate dietary needs in advance.
