The Chef

Philip Pretty is the chef and co-owner of Heritage, a MICHELIN-starred restaurant in Long Beach, California, known for its zero-waste approach and seasonal tasting menu.

A graduate of Le Cordon Bleu, Pretty trained in some of Los Angeles’ most influential kitchens, including Providence under Michael Cimarusti, Sona with David Myers, Joe’s Restaurant with Joe Miller, and The London West Hollywood under Anthony Keene. He later served as executive chef at Axe, where he refined a style rooted in simplicity and ingredient-driven cooking.

In 2020, Pretty opened Heritage with his sister, Lauren Pretty, building the restaurant around a zero-waste philosophy that guides every aspect of the kitchen. His cooking often centers on restraint, with dishes composed of just a few elements, allowing technique and sourcing to take precedence over complexity. That approach earned Heritage both a MICHELIN Star and a MICHELIN Green Star in 2023 and 2024.

Central to his work is Heritage Farm, launched in 2022, which supplies produce for the restaurant while serving as a space for events and community engagement. The farm supports a closed-loop system in which ingredients are grown, used, and repurposed with minimal waste.

In 2024, Pretty expanded his work with the opening of Olive & Rose, a more casual concept named after his daughters that reflects a broader range of his cooking. Across his projects, his focus remains consistent: thoughtful sourcing, minimal waste, and a disciplined approach to flavor built on clarity rather than excess.
