Tuscan butcher Dario Cecchini is coming to Los Angeles, and he is not bringing a restrained little tasting menu with him.
On August 29, Cecchini will join Redbird chef and owner Neal Fraser for Beefsteak, the restaurant’s annual bacchanal devoted to meat, wine, and eating with abandon.
Inspired by the historic communal feasts of New York and Florence, the event will unfold inside Vibiana, the former cathedral adjoining Redbird in Downtown Los Angeles. Guests can expect a multi-course procession of beef served family-style, with platters passed around communal tables and wine flowing throughout the evening.
Cecchini, whose family has operated a butcher shop in Panzano in Chianti for generations, is known for his nose-to-tail philosophy and conviction that every cut of an animal has value. For this collaboration, the butcher, restaurateur, and author will bring his theatrical approach to meat to one of Los Angeles’ most gleefully over-the-top culinary traditions.
