Vegan Chia Seed Pudding Recipe
To prepare a delicious vegan chia seed pudding first combine the thawed berries with the lemon juice and a tablespoon of agave nectar in a food processor or blender.
Blend on high until smooth.
Scrape into a bowl, cover, and chill until ready to serve.
Whisk together the almond milk, coconut milk yoghurt, and remaining agave nectar in a mixing bowl.
Add the chia seeds, whisk again briefly, and leave to stand for 30 minutes.
After 30 minutes, stir the chia seeds, cover, and chill overnight.
Give the vegan chia seed pudding a quick stir and then divide between serving glasses.
Top the vegan chia seed pudding with the mixed berry puree and garnish with mint before serving.
