Mix the strawberries with the lime juice, zest and rum and pour into 4 ramekins.
Place a scoop of vanilla ice cream on top of each.
Beat the egg whites until stiff peaks form and gradually stir in the icing sugar.
Beat until the mixture stiffens again.
Place the meringue gently on top of the ice cream so that everything is covered and then grill for 4-5 minutes until golden brown.
