Season the turkey mince with salt and pepper and mix well with your hands.
Shape into 4 burgers.
In a small bowl, mix the honey, mustard and lemon juice and season to taste.
Heat the oil in a wide pan and cook the burgers for about 5 minutes on each side or until cooked through.
Serve in the buns with the relish and the lettuce, tomato and onion to garnish.
