Gluten Free Shortbread Cookies with Stevia
To prepare delicious gluten free shortbread cookies first grind the hazelnuts finely in a food processor. Set aside.
Put the grated apple into a bowl.
Add the vanilla, stevia and butter and mix until smooth.
Mix the dry ingredients in a mixing bowl.
Add the apple mixture and mix well until a dough forms. Set aside to rest for 30 minutes.
Heat the oven to 170ºC (150ºC fan).
Line 2 baking trays with non-stick baking paper.
Pat out the dough evenly on non-stick baking paper.
Cut out small rounds with a crimped edged cutter.
Place on the baking trays and bake for about 20 minutes, until light golden.
Sprinkle with ground hazelnuts and granulated stevia and cool on the trays for 5 minutes.
Place the gluten free shortbread cookies on a wire rack to cool completely.
