Lemon juice
1/2 lemon
2-3 slices,white, crusts removed
leaves to garnish


  • Place apricots and all the ingredients in a food processor apart from the bread and the mint leaves.
  • Pulse until smooth.
  • Add bits of the bread to the mixture to thicken it, pulsing in between additions.
  • Stop when you have achieved a puree like consistency.
  • Transfer to a bowl, cover and chill until you want to serve it.
  • When you are ready to serve it, ladle into bowls and garnish with a few mint leaves.
