According to the Noma website, the new menu will change three times a year “to match the type of ingredients that are at their peak at any given time of the year.” So, the opening menu will be based on seafood, early summer to early autumn will be vegetables and early autumn to January will be game and forest, the only time meat will play “a starring role,” they say.
The new restaurant will serve 40 covers for lunch and dinner, Wednesday to Saturday, priced at 2250 DK (£270/$350) per person (excluding drinks.)
Noma joins a number of top restaurants in cutting the working week for its staff, including Maaemo in Oslo and Attica in Melbourne.
