His growing responsibilities also include working for other restaurant owners. At The Grape Ape, a wine bar, restaurant, and wine shop in South Miami, he serves as executive chef. Owners Jason Gaetan, Oscar Gaetan, and Greg Chin initially approached him for guidance on developing a menu and hiring a chef. He ended up taking on the role himself.

His own expansion plans include Luca Trattoria on Normandy Isle, a more relaxed sister restaurant to Luca Osteria. The new location will also give longtime collaborator Eddie Fuentes a larger role, leading much of the beverage program.

“He was part of our original team at Eating House, but we didn’t have a liquor license, so there really wasn’t much for him to do. Now at Luca Trattoria, he’s going to get the chance to have a voice and really shine.”

His plans also include Luca Steak in Wynwood, a project he describes as a combination of his two greatest loves: classic steakhouse cooking and Italian food.

“We’ve come a long way from building our own tables with a construction company’s tools that they left overnight,” he says with a laugh. “Luca Steak’s location is insane, and the build-out and decor is going to be beautiful.”

The expansion also means a growing team. He points to health insurance, financial security, and room to grow as part of what those jobs offer.

“I think it’s a very fulfilling life to wake up every day and do what I love while knowing there are people who put food on their tables because of it,” he says. “The more restaurants I can open, the more people I can employ, and the more people I can help take care of.”
