Have you been tossing broccoli stems in the trash? It's time to put them to good use. These hearty stems are an excellent addition to homemade stock but can also be turned into a fabulous broccoli stem slaw.
Broccoli stem slaw is similar to good ol' coleslaw but shredded broccoli stems take the place of cabbage. Not only do broccoli stems add flavor and crunch but they contain iron, calcium and vitamin C.
Broccoli stem slaw can be enjoyed as a salad or tucked into tacos, burgers and sandwiches. It is good in just about anything.
