Mary Attea taught Noah Ponjuan that even a technically accomplished dish has to pass a simple test. Is it delicious? Now, as chef de cuisine at The Musket Room, Ponjuan passes that lesson on to his cooks. He’s also learned to judge how much help to give. During a busy service, he’ll step in when a cook gets stuck. When there’s time, he’ll let them work through the problem and talk it over afterward.

That’s the approach he’s taking with Lucy Field, his first hire as chef de cuisine, who now cooks at Per Se. Ponjuan encouraged her to enter the S.Pellegrino Young Chef Academy Competition and is mentoring her ahead of the November 9 U.S. Regional Final in New York. The winner advances to the Grand Finale in Milan.
