Paccheri with sea bass, olives, capers and lemon: the recipe

Serves 4

Ingredients

For the crumble

  • 400g breadcrumbs
  • 5g fresh chili
  • 150g butter, melted
  • *You will have plenty left over for other recipes.

For the paccheri

  • 50g extra virgin olive oil
  • 2 unpeeled garlic cloves
  • 350g filleted sea bass
  • 300g paccheri
  • 100g capers preserved in oil
  • 100g Taggiasca olives (pitted)
  • 100g vegetable stock
  • 500g confit yellow datterini tomatoes
  • Salt
  • 80g chili crumble
  • 1 Amalfi lemon

Method

  1. Blend the breadcrumbs with the chili. Add the melted butter and bake at 150°C for 15 minutes.
  2. Place the oil and the unpeeled garlic cloves in a frying pan. Fry until golden, then remove the garlic.
  3. Add the sea bass (previously sliced into 3 mm-thick carpaccio). Brown the fish.
  4. Add the capers and olives (cut into quarters). Add the vegetable stock and the yellow datterini tomatoes.
  5. Meanwhile, bring the water to the boil in a saucepan. Season with salt and cook the paccheri. Finish cooking the paccheri in the sauce.
  6. Plate up and sprinkle with the chili crumble and some grated Amalfi lemon zest.
