Set in an old monastery in the town of Zwolle, Netherlands, Mr and Mrs Boer's three Michelin starred restaurant of pure delight De Librije (library) is set inside the library of the 15th century abbey. The couple works together to make the menu as pure as possible, Mrs Boer suggests the wine, but ultimately it is what goes in the dish that wins. Mr Boer is the Chef behind the simple, healthy and clean philosophy of the food that gets served. He believes in local produce, but promises to go travel around the world and try all tastes.
Rather than just being faux-meat, Mamu is different. It's a mushroom-based meat alternative that's getting its launch in restaurants so that chefs can test its versatility. Flora Tsapovsky investigates.
