The film shows the teams that still go out and handpick wild oysters, venturing out daily to provide New York with some super fresh hauls.
The ten minute movie is well worth a watch, produced by Show Love, it shows a form of oyster farming that is now very rare as more commercial operators opt to rake oysters and more oysters come from farms.
Staff shortages are hitting the hospitality sector hard, prompting some restaurants to look outside the industry to train those without restaurant experience for life in the kitchen. Andrew Friedman finds out more.
