When tackling a fresh head of cauliflower you'll need to work from the bottom up. The best thing to do is turn the cauliflower on its side so you can slice off the root. Then turn the vegetable upside down to remove the thick outer leaves with either your hand or a sharp knife.
The next step into learning how to cut cauliflower into florets involves the art of observation. After removing the leaves you'll notice a thick stem running through the center of the cauliflower. The florets are connected to this stem so take good look and familiarize yourself with the structure.
Then run the tip of a knife along the stem to start releasing the florets. Work slowly and steadily and you'll soon end up with gorgeous cauliflower florets which you can further separate with your hands or using the tip of a knife at the base of each one. All that's left is washing the cauliflower so you can make these phenomenal dishes.
