The team at Mad Food Camp have released another video from the 2012 event, this time with the American chef and raconteur Dan Barber.
Known for his interesting lectures Barber, who runs the Blue Hillrestaurants, talks about the taste of wheat and the work of Dr Steve Jones who Barber challenged to breed a really tasty wheat.
Dan now works with his own wheat in the kitchen and talks about his work with Dr Jones and some of the factors he think can and should be improved in the wheat production industry.
Dan is a chef who makes strong relationships with some of the most passionate producers in the world and this video is just a small insight into his world - enjoy!
