Hayato is a two-MICHELIN-starred Japanese kaiseki restaurant located in Los Angeles’ ROW DTLA district, offering one of the city’s most intimate fine dining experiences. With just seven seats at a handcrafted counter and a single seating each evening, the restaurant is designed around focus, quiet precision, and direct engagement between chef and guest.

The restaurant is led by chef and owner Brandon Go, whose approach reflects decades of immersion in Japanese cuisine. Go’s culinary foundation was formed in his family’s Japanese restaurant in Southern California, where he began working as a teenager before spending years refining his skills in Japan. His training included repeated extended stays in Tokyo kitchens, with significant experience alongside leading practitioners of modern kaiseki, shaping a style grounded in tradition yet responsive to place and season.

At Hayato, the nightly menu follows the structure of kaiseki, unfolding through a sequence of carefully considered courses that emphasize balance, temperature, texture, and restraint. Preparations may include raw, simmered, grilled, steamed, and fried elements, each designed to highlight the natural character of the ingredients rather than embellish them. Many components are finished and plated in front of guests, reinforcing the sense of immediacy and intention that defines the experience.

Hayato opened in 2018 and earned its first MICHELIN star the following year, followed by a second star in 2021. Since opening, it has been consistently recognized among Los Angeles’ most significant restaurants, including repeated placement in the Los Angeles Times annual rankings, including the No. 1 spot in 2022.
