All purpose flour: 150 g
Butter: 100 g
Brown sugar: 100 g
FOR THE CUSTARD
Milk: 500 ml
Vanilla extract: 1 tsp
Egg yolks: 4

Chef Aidan McGee loves this dessert for its balance of flavors, textures, and temperatures. “Always serve apple crumble warm with something cold alongside, custard, cream, or even ice cream,” he says. Back home, he adds, “apple crumble shows up whenever apples are good and someone needs cheering up.”
How to make Apple Crumble

Prepare the Apples
- Toss the sliced apples with the sugar, cinnamon, and lemon juice, then transfer them to a baking dish.

Make the Crumble
- Rub the butter into the flour with your fingertips until the mixture resembles coarse crumbs.
- Stir in the brown sugar.

Assemble the Crumble
- Sprinkle the crumble mixture evenly over the apples.

Bake the Crumble
- Bake at 350°F for 35 to 40 minutes, until the topping is golden and the apples are tender.

Prepare the Custard
- While the crumble bakes, heat the milk with the vanilla in a saucepan.
- In a separate bowl, whisk together the egg yolks and sugar.

Cook the Custard
- Slowly pour the warm milk into the egg mixture, whisking constantly.
- Return the mixture to the pan and cook gently over low heat, stirring continuously until thickened.
- Do not allow the custard to boil.
