Auro is the fine-dining restaurant at Four Seasons Resort and Residences Napa Valley in Calistoga. It earned a Michelin star eight months after opening and has retained the distinction for four consecutive years, making it Calistoga’s only Michelin-starred restaurant. Auro retained its star in June 2026 following the April appointment of Executive Chef Evan Neumann.

Neumann’s seven-course tasting menu changes with the seasons and presents contemporary California cooking grounded in classical French technique and influenced by Japanese cuisine. Ingredients come primarily from Napa Valley farms and vineyards and the Northern California coast. Menus often begin with conversations with growers about what is approaching peak season rather than simply what is already available.

Neumann describes his approach as “ingredient truth,” meaning that the product determines the direction of a dish and technique is used to reveal rather than obscure its character. Dishes have included razor clams with sea beans and fennel; Hokkaido scallop with chamomile and Japanese curry sabayon; kinmedai with brown butter ponzu; and dry-aged wagyu finished with squash blossoms from Tenbrink Farms. Each meal begins with amuse-bouches and house-made bread before progressing through the tasting menu.

The intimate dining room has oak floors and textured gray walls. Floor-to-ceiling windows frame the culinary team at work, while booth seating opens onto a semi-private terrace facing the resort’s vineyards and the Palisades Mountains. The Chef’s Table places guests inside the kitchen as the team prepares each course.

Resort Beverage Manager Derek Stevenson oversees a cellar containing more than 4,400 bottles across over 750 labels. Napa Valley anchors the collection, while international holdings include Petrus, Domaine de la Romanée-Conti, Château Latour, and Château Haut-Brion. The wine program received Wine Spectator’s Best of Award of Excellence from 2023 through 2026. An optional pairing follows the progression and seasonal character of Neumann’s menu.
