This salad is centered around mouth-watering watermelon, so you need to pick the ripest watermelon at the store. There are a few quick tips to help you with this, such as looking for well-defined stripes on the outside of the rind.
If you find a watermelon that’s solid green in color, then don’t pick this one. You need to make sure there are clear visible stripes as an indicator of the ripeness of the fruit inside. If you knock on the watermelon, you should also hear a deep and hollow sound. Any dry spots and dimples mean the fruit has likely been exposed to lots of sun and will be desirably sweet.
