Preheat the oven to 350°F and line a baking sheet with parchment paper.

Combine the granulated sugar and lavender buds in a food processor and pulse. Add the lavender sugar, melted unsalted butter, egg yolk, and vanilla extract to the mixing bowl and stir to combine.

Sprinkle the all-purpose flour, baking soda, and salt over the dough and mix slowly, stopping as soon as it’s all come together.
