Marcus Jernmark is a Swedish-born chef with an impressive culinary foundation. He distinguished himself as the chef-owner of Aquavit in New York, earning its first MICHELIN Star, before furthering his experience at Per Se. After his success in New York, Jernmark returned to Sweden to lead the kitchen at Restaurant Frantzén, where he earned three MICHELIN Stars. His journey then took him to Singapore, where he opened the three-MICHELIN-Star Restaurant Zén, a sister establishment to Frantzén.
Now back in the United States, Jernmark has spent the last several years on the West Coast, traveling throughout California. He has fostered relationships with the state’s coastal farmers, ranchers, artisans, and winemakers, building a deeper understanding of the people behind their exceptional, world-class products.
Jernmark is currently dedicated to his latest restaurant in Los Angeles, Lielle, named for his only daughter, where he explores Californian gastronomy. With Lielle, his MICHELIN-starred background is not the focus. Instead, he aims to move beyond the conventions of traditional fine dining, embracing a hyper-seasonal approach that emphasizes joy and energy as guiding principles.
