In the latest episode of Perfect Pairings - a spin off of his YouTube show Avec Eric - celebrity chef Eric Ripert tackles an age-old question: is black pepper a wine killer?
Black pepper, a spice high in tannins, is believed to cause wine to feel "short in the mouth," according to Ripert. To explore whether or not black pepper pairs well with wine the chef prepared steak au poivre (aka pepper steak) and teamed up with Aldo Sohm, wine director at Ripert's NYC restaurant Le Bernardin.
Together, they experimented to find the right wine for this hearty steak dish. Find out which wine made the cut and why in the video below:
