René Redzepi has created a Nordic Christmas menu for the Wall Street Journal including duck stuffed with apple and prunes, caramel potatoes, braised red cabbage, rice pudding with almonds, a cherry sauce and a caramel sauce.
The piece starts with a tale of Christmas dinner at Redzepi's house as he serves up a selection of mainly traditional Danish classics including lots of fish.
It's a nice behind the scenes look at how one of the world's best chefs sets about his Christmas lunch with colleagues, friends and family.
There's recipes for each of the dishes and although simple, there's a great chef's touch added to all of them. If you haven't decided what to cook yet on Christmas day here's a pretty good start.
