Making homemade corn tortillas with a side of spicy guacamole is easier than you think. What you do need to have on hand for the tortillas is yellow and blue cornmeal, respectively. Buy them at a store that sells Latin American ingredients, as the Mexican cornmeal is processed differently than polenta.
You don't need to have a mortar and pestle on hand for the guacamole but it sure helps. What is imperative is using fresh lime and cilantro, as they have no substitutes. The zesty flavor of the lime and brightness of the cilantro will balance the creaminess of the avocado.
