As elsewhere, the menu will offer contemporary dishes inspired by historic, and in some cases very historic, recipes, with some dating back to the 1300s. The restaurant’s ‘Meat Fruit’ dish, a chicken liver and foiegras parfait disguised as a mandarin, is perhaps its best known worldwide.
Blumenthal is not the only world class chef to head for the blistering sun of Dubai of late: Massimo Bottura will open a restaurant called Torno Subito at the W Hotel shortly, while Virgilio Martínez and Thomas Keller are already there with their Lima andBouchon Bakeryconcepts, respectively.
