Most New Yorkers would never expect the team behind Fish Cheeks and Bangkok Supper Club to open a bakery. But after years of searching for allergen-free baked goods for her husband, Jenn Saesue asked her business partner Chat Suansilphong to help bring the idea to life. The goal was to create a spot for sweet treats that eliminates the top nine allergens, including gluten, dairy, soy, nuts, and all animal products.
It was a challenge, but Suansilphong was on board, and Bub’s Bakery took shape. The co-founders of 55 Hospitality brought in James Beard Award–nominated baker Melissa Weller, a renowned pastry chef with experience at Per Se, Roberta’s, and Sadelle’s. They knew she could meet the moment. The team set out to show that allergen-free baked goods could stand alongside classic bakery offerings, which is why the menu includes items such as banana bread, a maple-blueberry scone, and A Big Cinnamon Roll made with laminated dough and a tangy cream cheese–style frosting.
The butter-yellow storefront on Lafayette Street in NoHo offers a warm first impression, signaling from the start that Bub’s Bakery is a welcoming spot with something for everyone inside.
