Chef Chat Suansilphong grew up in his father’s restaurant in Thailand, spending time both in the dining room and the kitchen. After moving to the United States to study at the Culinary Institute of America, he continued the family tradition by opening restaurants of his own. In 2016 he partnered with his brother, Ohm, along with Jenn Saesue and Pranwalai Kittirattanawiwat, to open Fish Cheeks, a seafood-focused Thai restaurant. As co-owner of 55 Hospitality, Suansilphong has since expanded the group with Saesue, launching Bangkok Supper Club in 2023, a restaurant inspired by Thai street food. They added a second Fish Cheeks in Williamsburg and opened Bub’s Bakery, an allergen-free bakery, in 2025.
