Vegan white bread: 2 loaves, crusts removed, cut into 3-inch pieces

Cremini mushrooms: 16 oz

Pecans: 6 oz, halved and toasted

Olive oil: 8 tbsp

Sage leaves: 1 tbsp, minced

Onion: 1, finely chopped

Leek: 1, finely chopped

Garlic cloves: 2, minced

Vegetable stock: 30 oz

Salt: to taste

Black pepper: to taste

Vegan stuffing is the perfect plant-based twist for a special Thanksgiving meal that’s full of flavor. Find our vegan stuffing recipe below

Preheat the oven to 275°F. Spread the bread over 2 baking sheets. Bake until dried, for 50 minutes. Remove from the oven and let cool.

Increase the oven temperature to 350°F. Place half of the cremini mushrooms into a food processor and pulse until chopped. Transfer to a mixing bowl and repeat with the second half of the mushrooms.

Add the pecan halves to the food processor and pulse until chopped. Set aside.

Heat the olive oil in a Dutch oven over medium heat. Add the chopped mushrooms and cook for 8 minutes, until softened and excess moisture has evaporated. Add half of the sage leaves and cook for 5 more minutes until the mushrooms have browned.

Add the chopped onion, leek, minced garlic cloves, and remainder of the sage, and cook for 10 minutes. Pour in the vegetable stock and bring to a boil. Add the baked bread cubes and fold them into the broth. Season to taste with salt and black pepper.

Transfer to a greased baking dish and cover with aluminum foil. Bake in the oven for 30 minutes. Remove the foil and bake for 10 minutes, until golden brown on top. Remove from the oven and let cool. Serve warm.

Stale bread often works best in a stuffing recipe as it absorbs the liquid without becoming mushy during the baking process. Whether you choose to use fresh or stale bread, don’t skip the step of baking it first as this makes it extra sturdy when mixing in with the other ingredients.
