How to make Three-Layer Chocolate Cake

Make the Cake Layers
- Mix the dry cake ingredients in one bowl and the wet ingredients in another.
- Combine until smooth, then bake at 325°F, rotating halfway through.
- Cool completely and cut into layers.

Prepare the Chocolate Base
- Combine 1 cup heavy cream, honey, milk chocolate, and dark chocolate in a heatproof bowl set over a double boiler. Melt gently, stirring until smooth.

Finish the Ganache
- Remove from heat and stir in the remaining 3 cups heavy cream and vanilla paste.
- Let rest for at least 3 hours.

Whip the Ganache
- Whip the rested ganache in a mixer for 1 to 3 minutes, or until light and tripled in volume.

Assemble the Cake
- Layer cake and ganache as desired.
- Add optional elements such as chocolate pearls or nuts.
- Refrigerate overnight before serving.
