First, prepare the mascarpone cream. Separate the yolks from the whites. Beat the yolks with the sugar until pale and fluffy.
Add the mascarpone gradually, gently folding it in with a spatula or whisk by hand so the cream stays light.
In a separate bowl, whip the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the mascarpone cream.
Let the cream rest in the refrigerator for at least 30 minutes before serving.
