Rocket and radicchio make the base of this mixed vegetable salad. Capers and Parmesan cheese lend sharpness and umami, also known as the sixth taste

Preparation
  • Wash and dry the rocket, slice the tomatoes in half.
  • In a large salad bowl, begin to assemble the ingredients for the salad: rocket, radicchio, tomatoes, capers (towel dried), pitted black olives, pine nuts and Parmesan cheese.
  • Using scissors, cut the chives and add them to the salad. Dress with extra-virgin olive oil and salt (only a little because the capers are salty). Mix well. Serve immediately.
  • For individual portions, arrange the salad in layers inside a glass cup. Start with the rocket (already dressed) and finish with shaved Parmesan cheese.
