Linguine: 1.5 oz

Frozen mussels: 4 oz

Unsalted butter: 4 tbsp, divided

Mushrooms: 3 oz, chopped

Black pepper: to taste

Garlic clove: 1, minced

Dry white wine: 2 oz

Heavy cream: 3 oz

Lemon: 1, zested

Bring a large pot of salted water to a boil. Cook the linguine pasta for 8 minutes, until al dente. Drain and reserve the cooking water.

Thoroughly rinse the frozen mussels in a fine-mesh sieve.

Melt 1 tbsp unsalted butter in a skillet over medium heat. Add the mussels and cook until fully thawed, about 3 minutes. Remove from the heat and transfer to a bowl.

Melt the remaining 3 tbsp unsalted butter in the skillet. Add the chopped mushrooms with a grind of black pepper. Cook for 3 minutes. Add the minced garlic clove and cook for a further minute, until fragrant.

Add the dry white wine to the skillet. Cook for 2 minutes to reduce. Add the heavy cream and the thawed mussels. Cook for 2 minutes until fully warmed through.

Add the linguine to the skillet and toss to coat fully in the sauce. If the sauce is too thick, use the reserved cooking water to thin it as required. Transfer to a plate and garnish with lemon zest. Serve immediately.

However, if you want to use fresh mussels, and have a reputable fish counter near you, then this recipe will also work just as well with the fresh variety. You’ll need to factor in additional cooking time to soak and steam the mussels, but this will only add around 15 extra minutes to the recipe. Where possible, don’t skip the inclusion of the dry white wine. Its crisp profile lifts the flavors of seafood in pasta dishes, and the acidity helps to cut through the richness of the sauce in this recipe. Opt for a grape, such as Sauvignon Blanc, that’s dry, acidic, and a little fruity.

How to Present Mussel Pasta Elegantly

This pasta dish can be served fresh from the skillet into your favorite pasta bowl, with a lemon wedge on the side, a helping of garlic bread, and a final grind of black pepper for a rustic presentation. If you’re cooking this dish for a dinner party, however, you can plate it more elegantly. Use tongs to transfer the pasta to the center of your pasta bowl, and rotate the plate gently to create a nest in the middle of the plate. You can then add a lemon wedge to the side and top the pasta with more mussels as needed to complete the presentation. A sprinkle of red chili pepper flakes adds a colorful and refined finish to the plate and brings a welcome heat to the dish.
