Butter: 6 oz

Onions (sliced): 5 oz

Garlic cloves (chopped): 3

Fresh lemon juice: 3 tbsp

Salt: To taste

Preheat an outdoor grill to medium heat and lightly oil.

Melt the butter in a saucepan over medium heat. Add the sliced onions and chopped garlic cloves. Stir for 5 minutes until soft. Remove from heat and stir in freshly squeezed lemon juice and salt.

Transfer scallops to a large mixing bowl and coat with the butter mixture. Let rest for 5 minutes.

Thread scallops onto skewers and grill until they turn opaque after 5 minutes. Turn once during grilling. Serve hot from the grill, brushed with any remaining butter mixture.

As in the recipe above, you can also reserve some of this sauce to pour over the top afterwards for even more flavor. It’s possible to quickly marinate scallops, but if you can set them aside for an hour you will get better results in your final dish. 

Don’t leave them for longer than one hour, however, otherwise the scallops can start to get a little tough. Once you’re happy with the marinade, transfer them onto a skewer for grilling
