Pastry: 10.5oz (300g) pack ready-rolled shortcrust

Butter: for frying

Spring onion: 2, trimmed and finely chopped

Eggs: 3

Whole milk: 1/3 cup (75ml)

Cheddar: 5.3oz (150g), grated

Method

Preheat the oven to 180°C (356°F). Use the pastry to line a 23cm tart tin, trimming it while leaving a small amount extending beyond the edges to account for shrinkage. Take some baking paper, scrunch it up, carefully smooth it out and place it over the pastry. Proceed to fill the tart shell with baking or dried beans.

Bake blind for 10 minutes, then remove the paper and beans before baking for an additional 5 minutes. Use a knife to trim the pastry to an even level with the tart tin's edge, then allow it to cool.

Melt a knob of butter in a pan and gently sauté the spring onions for 7-8 minutes or until they become tender. Allow them to cool.

In a bowl, whisk together the eggs and milk until well combined. Stir in the cooled onions and cheese, then season the mixture. Pour it into the pastry case and bake for 25-30 minutes, or until the filling is set and the top has a light golden hue.
