The red-veined sorrel adds a fresh, vibrant acidity that mirrors the wine’s natural lift, and the hazelnut crumble introduces a subtle richness that plays beautifully with the texture we build through sur lie and neutral oak barrel aging.

2023 Valette Sonoma Coast Pinot Noir and Smoked Liberty Farms Duck Sausage

The smoked Liberty Farms duck sausage is one of those dishes that seems like it was made for Pinot Noir. The richness of the duck confit and the subtle smoke in the sausage are balanced by the bright acidity and silky texture of our 2023 Valette Pinot Noir, also made by Bob Cabral. Pickled dried cherries mirror the wine’s vibrant cherry character, while the cocoa nibs bring out its deeper layers of spice and earth.
